What you’ll need
Here is the list of ingredients you will need to make this amazing quick and easy pasta recipe. Pasta: any small-shaped pasta works best and that said, you can use spaghetti or linguine as well. Boursin Cheese: this is a soft crumbly and spreadable cheese with herbs that comes in a box. use any flavored Boursin cheese, I am using garlic and herbs. However, if not available, substitute with cream cheese or ricotta but remember it may not taste the same but close enough. Parmesan cheese, freshly grated from a block. this is better than pre-grated as it tastes much better Sundried tomatoes - this is a must to make the sauce flavorful, I am using oil-packed sundried for this recipe, however, you can substitute with olives or roasted peppers. Sundried tomatoes oil: I used this instead of normal olive oil for added flavor Butter: Salted or unsalted is fine just make sure to adjust the salt accordingly when cooking. You can however omit butter completely and substitute it with olive oil. Salt and freshly ground black pepper to taste Onions: I used yellow onions, you can substitute with shallots for a mellow flavor Fresh garlic substitute with garlic powder Heat: I used dried jalapeno and red pepper for a little heat and kick. Use both if you have them or one you prefer. Cayenne pepper is also a close substitute for these peppers. Pasta water: substitute with low sodium chicken stock.
How to make Boursin pasta
Boil the pasta according to the packet instructions in salted water until al dente and reserve some pasta water. Whilst the pasta is boiling, move on to making the cream sauce. Melt butter and olive over medium-high heat then saute finely chopped onions and garlic until fragrant, soft, and translucent. Add sundried tomatoes, dried jalapeno pepper, and stir to combine, continue to cook for another minute (do keep an eye so it doesn’t burn). Add grated parmesan cheese and Boursin cheese into the sauteed aromatics and stir in some pasta water to make it emulsified and creamy. (the pasta should be done at this time, drain and still reserve some water) Add the drained pasta to the sauce, stir or toss to combine. Take it off the heat and serve immediately with more parmesan cheese and fresh lemon juice. enjoy!
